Cream Cheese Shortbread
Cream icing sugar, Western Star Unsalted Butter and Mainland Cream Cheese in mixer.
Add sifted flours slowly, and zest of lemon. Wrap in gladwrap and rest in fridge for 2 hours.
Preheat fan forced oven to 165°C. Reduce fan speed by half if possible.
Remove dough from fridge, allow to warm for 30 minutes. Roll dough out to 7mm thickness, cut into preferred shapes and sizes.
On baking paper, tray up shortbread, place in oven for 10 minutes. Remove from oven and sprinkle with a little caster sugar and place back in oven for a further 5-8 minutes until lightly golden.
